My Amazing Adventure in Healthy Baking!

Hi, friends! Guess what? I’ve been baking since I was two years old, and it’s super-duper fun! Today, I want to share my healthy baking adventure with you. Get ready for some deliciousness!

When I was tiny, my mom and I would bake together. It was like magic! First, we’d gather all the ingredients. I had a special job—I got to take out all the yummy things we needed. My mom helped by measuring everything because, you know, I was still learning the numbers.

Wearing my super cool apron made me feel happy! Mixing things together was my job, and I was really good at it. No lumps allowed!

The coolest part? We weren’t making stuff from a box. Nope! We were creating our own tasty treats. My absolute favorite was pumpkin muffins.

Even though I couldn’t read back then, I knew the names of all the ingredients. We used pumpkin (of course!), apple sauce, honey (yum!), vanilla (smells so good!), aquafaba (which is like magic chickpea juice), gluten-free flour, baking powder, baking soda, a little pinch of salt, and pumpkin spice (makes everything nice).

Stirring all those things together was like stirring a magic potion. But, you know what was even better? Taste testing! Yep, I got to try everything. It was my super-important job. Who wouldn’t love that job, right?

Oh, and guess what? When I was five, my mom and I made a super cool video about making mini-pumpkin muffins. You can watch it too! It’s like a baking show, but with me as the star. 🌟

Mini-Pumpkin Muffins Recipe

Makes 24 mini muffins

Ingredients

  • 1 1/2 cups Gluten Free Flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin spice
  • 1 1/3 cup pumpkin puree
  • 1/3 cup apple sauce
  • 6 TB aquafaba (or 2 large eggs)
  • 1 1/4 cups of honey
